I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

Yield: 3 servings, each with 5 grams of carbohydrates and 3 grams of fiber, for a total of 2 grams of usable carbs and 6 grams of protein.

 

INGREDIENTS 

  • 1 package (10 ounces) frozen, chopped spinach, thawed
  • 1/4 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic, crushed

 

INSTRUCTIONS

  1. Put all the ingredients in a heavy-bottomed saucepan over medium-low heat.
  2. Stir occasionally and simmer for 7 to 8 minutes until the spinach is tender and the sauce is thick and creamy.
  3. Adjust seasoning to taste.
  4. Serve hot.
