I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

Yield: 6 servings, each with 5 grams of carbohydrates and 4 grams of fiber, for a total of just 1 gram of usable carbs and 5 grams of protein.

 

INGREDIENTS 

  • 3 tablespoons butter
  • 2 pounds fresh spinach, washed and dried
  • 1 clove garlic, crushed
  • 1 or 2 anchovy fillets, finely chopped

 

INSTRUCTIONS

  1. Heat the butter in a heavy skillet over medium heat.
  2. Add the garlic and spinach to the skillet and sauté until the spinach is just limp.
  3. Stir in the anchovies and continue to cook for a minute or two, until the anchovies have dissolved into the butter and coated the spinach.
  4. Serve immediately.
