INGREDIENTS
- 3 tablespoons butter
- 2 pounds fresh spinach, washed and dried
- 1 clove garlic, crushed
- 1 or 2 anchovy fillets, finely chopped
INSTRUCTIONS
- Heat the butter in a heavy skillet over medium heat.
- Add the garlic and spinach to the skillet and sauté until the spinach is just limp.
- Stir in the anchovies and continue to cook for a minute or two, until the anchovies have dissolved into the butter and coated the spinach.
- Serve immediately.
