I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

My girlfriend Tonya always though that this was a terribly complicated dish because it’s elegant and delicious. As if! It’s child’s play.

Yield: 4 servings, each with 12 grams of carbohydrates and 4 grams of fiber, for a total of 8 grams of usable carbs and 6 grams of protein.

 

INGREDIENTS

  • 1 bag (1 pound) frozen French-cut green beans
  • 1/2 cup slivered almonds
  • 4 tablespoons butter

 

INSTRUCTIONS

  1. Steam or microwave the green beans according to the package directions.
  2. While the beans are cooking, saute the slivered almonds in the butter over medium heat, stirring frequently, until golden.
  3. When the beans are done, drain the water off of the beans.
  4. Pour the almonds and butter over the green beans, making sure to use a scraper to get all the butter.
  5. Toss the green beans and almond mixture.
  6. Serve hot and enjoy!
