This is a good quick supper. Serve it with a green salad and some garlic bread for the kids.
Yield: 1 serving, with 8 grams of carbohydrates and 1 gram of fiber, for a total of 7 grams of usable carbs and 17 grams of protein.
INGREDIENTS
- 2 tablespoons olive oil
- 1/4 cup diced green pepper
- 1/4 cup chopped onion
- 1 clove garlic, crushed
- 3 eggs
- 1 tablespoon grated Parmesan cheese
INSTRUCTIONS
- Heat the olive oil in a heavy skillet over medium heat, and saute the pepper, onion, and garlic for 5 to 7 minutes, or until the onion is translucent.
- Beat the eggs with the Parmesan and pour into the skillet.
- Scramble until the eggs are set.
- Serve.
