Chili Omelet

I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

Beef chili or turkey chili, it doesn’t matter-they both make a great omelet.

Yield: 1 serving, with about 6 grams of carbohydrates (depending on your chili recipe), no fiber, and 33 grams of protein.

INGREDIENTS 

  • 1 tablespoon olive oil
  • 2 eggs, beaten
  • 1/2 cup all-meat chili, warmed
  • 2 tablespoons shredded Cheddar cheese
  • 1 tablespoon sour cream

 

INSTRUCTIONS 

  1. Make your omelet according to Dana’s Easy Omelet Method.
  2. Place the chili over half of your omelet when you get to step 6.
  3. Top with the Cheddar, cover, turn the burner to low, and cook until the cheese is melted (2 to 3 minutes).
  4. Follow the directions to finish making the omelet.
  5. Top with the sour cream.
