Again, a great way to use up leftovers!

Yield: 1 serving. The carb count for this omelet will depend on your recipe for fajitas. The eggs and sour cream will add only 2 grams of carbs, no fiber, and 11 grams of protein.

 

INGREDIENTS 

  • 1 tablespoon olive oil
  • 2 eggs
  • Leftover steak or chicken fajitas, warmed
  • 1 tablespoon sour cream

 

INSTRUCTIONS 

  1. Make your omelet according to Dana’s Easy Omelet Method.
  2. Place the fajitas over half of your omelet when you get to step 6.
  3. Cover, turn the burner to low, and cook for 2 to 3 minutes.
  4. Follow the directions to finish making the omelet.
  5. Top with the sour cream.
