Yield: 1 serving. The carb count for this omelet will depend on your recipe for fajitas. The eggs and sour cream will add only 2 grams of carbs, no fiber, and 11 grams of protein.
INGREDIENTS
- 1 tablespoon olive oil
- 2 eggs
- Leftover steak or chicken fajitas, warmed
- 1 tablespoon sour cream
INSTRUCTIONS
- Make your omelet according to Dana’s Easy Omelet Method.
- Place the fajitas over half of your omelet when you get to step 6.
- Cover, turn the burner to low, and cook for 2 to 3 minutes.
- Follow the directions to finish making the omelet.
- Top with the sour cream.
