Chocolate Peanut Butter Balls

INGREDIENTS

  • 1/2 stick butter, softened
  • 1/2 cup natural peanut butter
  • 2 tablespoons coconut flour
  • 2 tablespoons vanilla whey protein powder
  • 1/2 cup broken up sugar-free chocolate bars, melted
  • 1 teaspoon organic vanilla extract
  • 1 1/2 cups powdered Xylitol (or some other natural sweetener)

 

INSTRUCTIONS

  1. In a mixing bowl, combine the softened butter and natural peanut butter. Beat the mixture with an electric hand mixer until smooth.
  2. Add in the organic vanilla extract and vanilla whey protein powder to the peanut butter mixture. Mix well until all the ingredients are combined.
  3. Add in the powdered Xylitol sweetener and mix well until it is well incorporated.
  4. On a working surface, roll the dough into 24 bite-sized balls. Place the balls on a pan lined with parchment paper.
  5. Sprinkle each ball with the melted sugar-free chocolate, making sure to cover each ball evenly.
  6. Refrigerate the peanut butter chocolate balls for at least 2 hours before serving. These can be stored in an airtight container in the refrigerator for up to a week.
