These healthy, low-fat pancakes are a tasty way to start the day and are very quick to make. They are delicious with cranberry syrup or try them with warmed applesauce.
Makes 10–12 pancakes
INGREDIENTS
- 1/2 cup all-purpose flour
- 1/2 cup quick-cooking oats
- 2 tsp. baking powder
- 1 tbsp. brown sugar
- 1 tbsp. vegetable oil
- 1 cup oat milk or apple juice
- 1 medium-tart apple, shredded
- 1 tsp. ground cinnamon
- 1–2 tbsp. sunflower oil, for frying
- warmed maple syrup, to serve
INSTRUCTIONS
- In a large mixing bowl, mix together flour, oats, baking powder, sugar, vegetable oil, oat milk, shredded apple, and cinnamon.
- Lightly oil a nonstick skillet or griddle with sunflower oil and place over medium heat.
- Carefully pour about 1/4 cup of the pancake batter into the pan. Fry until lightly browned on one side, then flip and cook the second side.
- Keep warm. Repeat with remaining batter.
- Serve with warmed maple syrup.
VARIATIONS:
- Oaty Apricot Pancakes:
- Prepare the basic recipe, using 1/2 cup chopped, plump, dried apricots in place of the shredded apple and 1 teaspoon orange zest in place of the cinnamon.
- Orange juice may also be used in place of the apple juice.
- Oaty Apple Pancakes with Sweet Spices:
- Prepare the basic recipe, using 1 tablespoon maple syrup in place of the sugar.
- Also use 1/2 teaspoon ground cinnamon, 1/4 teaspoon ground nutmeg, and 1/8 teaspoon ground cardamom in place of the cinnamon.
- Blueberry & Oaty Banana Pancakes:
- Prepare the basic recipe, using 1 tablespoon maple syrup in place of the sugar and 1 small mashed banana with 1/2 cup blueberries in place of the apple.
- High-Fiber Oaty Apple Pancakes:
- Prepare the basic recipe, using whole wheat or buckwheat flour in place of the all-purpose flour.
- Serve with applesauce and raisins.
