Baked Marinated Tofu

I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

Given its Asian roots, a Chinese-style marinade complements the flavor and texture of tofu to perfection.

SERVES 4

 

INGREDIENTS

  • 1 tbsp. rice vinegar
  • 1 tbsp. sesame oil
  • 2 tbsp. soy sauce
  • 2 tsp. sugar
  • 2 garlic cloves, minced
  • 1 tbsp. minced gingerroot
  • 2 scallions, finely chopped
  • 1/2 tsp. ground cumin
  • 1/2 tsp. ground coriander
  • 1/4 tsp. dried thyme
  • pinch of black pepper
  • pinch of cayenne pepper
  • 1 lb. extra-firm tofu, pressed and cut into 1/2-inch-thick slices

 

INSTRUCTIONS

  1. In a bowl, combine all the ingredients except the tofu.
  2. Put the tofu slices in a baking dish, cover with the marinade, and refrigerate overnight, turning once while marinating.
  3. Preheat the oven to 375°F.
  4. Drain off the excess marinade.
  5. Bake the tofu for 15 minutes, turn over the slices, and cook for another 15 minutes, until the tofu has developed crusty edges.
