Carrot Soup with Ginger and Lemongrass

Glamour’s beauty editors call carrots “the friendliest skin food around.” They’ve read the studies and they know: Carrots are packed with beta carotene, which repairs the skin, and loaded with vitamin C, an antioxidant that battles free radicals. This zingy, gingery soup is a delicious way to get your skin fix, and it’s perfect with a salad for a light lunch.

Serves 2 to 3

 

INGREDIENTS

  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons grated ginger
  • 2 stalks lemongrass, bruised
  • 4 cups chopped carrots
  • 4 cups vegetable or chicken broth
  • Salt and pepper
  • Juice of 1 lime
  • Cilantro leaves, for garnish

 

INSTRUCTIONS

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, garlic, ginger, and lemongrass and cook until the onion is soft and translucent, about 5 minutes.
  3. Add the chopped carrots and broth to the pot and bring to a boil.
  4. Reduce the heat and let simmer until the carrots are tender, about 20 minutes.
  5. Remove the lemongrass stalks from the pot and discard.
  6. Puree the soup with an immersion blender or transfer to a blender and puree in batches.
  7. Season with salt and pepper to taste and stir in the lime juice.
  8. Serve hot, garnished with cilantro leaves.
