Mashed Potato with Sour Cream and Chives

I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

Makes 5 cups – serves 10.

 

INGREDIENTS

  • 1¼ cups Ensure® Vanilla powder
  • 1.25kg potatoes, peeled
  • 5 tbsp sour cream
  • 2 tbsp butter
  • ¼ cup chopped chives

 

INSTRUCTIONS

  • Cut potatoes into chunks and place into medium saucepan and add cold water to cover.
  • Bring to the boil, cover and cook until potatoes are cooked.
  • Drain potatoes. Add sour cream, butter and Ensure® powder and mash until smooth.
  • Stir in chives and serve.
