Salmon Patties

I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

Serves 10.

 

INGREDIENTS

  • 1 cup Ensure® Vanilla powder
  • 2½ cups mashED potato
  • 2½ tins (425g) salmon
  • Finely grated rind 1 lemon
  • 5 spring onions, finely chopped
  • 3 eggs, lightly beaten
  • 2 tbsp vegetable oil
  • 1¼ cups breadcrumbs

 

INSTRUCTIONS

  • Place salmon into a mixing bowl with potato, eggs, lemon rind, spring onions and Ensure® powder.
  • Shape well into 20 patties.
  • Coat patties in breadcrumbs.
  • Heat oil on medium heat and fry patties until lightly browned on both sides.
  • Serve hot with tartare sauce and salad or steamed vegetables.
