SERVES: 6

PREP TIME: 10 MINUTES, PLUS 4 HOURS TO CHILL

COOKING TIME: 15 MINUTES

INGREDIENTS

  • 8 ounces bow-tie (farfalle) pasta
  • 2 boneless, skinless chicken breasts
  • 1 can (15 ounces) chickpeas (garbanzo beans), drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Lemon wedges (for serving)

INSTRUCTIONS

  1. Cook the bow-tie pasta according to the package instructions until it’s al dente. Drain the cooked pasta and rinse it under cold water to stop the cooking process. Set aside.
  2. Preheat a grill or grill pan over medium-high heat.
  3. Season the chicken breasts with salt, black pepper, and a drizzle of olive oil. Grill the chicken for about 6-8 minutes on each side, or until it’s fully cooked and the internal temperature reaches 165°F (74°C). Once cooked, remove the chicken from the grill, let it rest for a few minutes, and then slice it into thin strips.
  4. In a large mixing bowl, combine the cooked bow-tie pasta, sliced grilled chicken, chickpeas, halved cherry tomatoes, diced cucumber, finely chopped red onion, sliced Kalamata olives, crumbled feta cheese, and chopped fresh parsley.
  5. In a separate small bowl, whisk together the extra-virgin olive oil, red wine vinegar, minced garlic, dried oregano, salt, and black pepper to create the dressing.
  6. Pour the dressing over the pasta and chicken mixture in the large bowl. Gently toss all the ingredients to ensure they are coated in the flavorful dressing.
  7. Taste the pasta salad and adjust the seasoning if needed by adding a bit more salt, pepper, or a splash of red wine vinegar for acidity.
  8. Once the Bow-Tie Pasta Salad is well-mixed and the flavors have melded, cover the bowl and refrigerate the salad for about 30 minutes to allow the flavors to develop and the salad to chill.
  9. Before serving, give the salad a final toss to make sure the ingredients are evenly distributed.
  10. Serve the chilled Bow-Tie Pasta Salad with Chicken and Chickpeas on individual plates or in a large salad bowl.
  11. Garnish the salad with additional chopped fresh parsley and serve with lemon wedges for a refreshing squeeze of citrus before eating.
  12. Enjoy the delightful combination of tender grilled chicken, protein-packed chickpeas, and vibrant vegetables in this Bow-Tie Pasta Salad, a dish that celebrates the history and versatility of pasta while delivering a wholesome and satisfying meal.
