INGREDIENTS 

  • 1 lb ground turkey
  • 1 onion, finely chopped
  • 1 red bell pepper, finely chopped
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and black pepper to taste
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup diced tomatoes
  • 1/4 cup chopped fresh cilantro
  • Juice of 1 lime
  • Large lettuce leaves (such as iceberg or Romaine)
  • Optional toppings: shredded cheese, diced avocado, sour cream, salsa

 

INSTRUCTIONS

  1. In a large skillet over medium heat, cook the ground turkey until browned and fully cooked. Break apart the turkey as it cooks. Drain any excess fat if needed.
  2. Add the finely chopped onion and red bell pepper to the skillet with the cooked turkey. Sauté until the vegetables are softened.
  3. Sprinkle the chili powder, ground cumin, paprika, garlic powder, onion powder, salt, and black pepper over the turkey and vegetables. Stir to evenly distribute the spices.
  4. Incorporate the drained and rinsed black beans and corn kernels into the skillet. Stir to combine with the turkey and vegetables.
  5. Add the diced tomatoes to the skillet, followed by the chopped fresh cilantro. Squeeze the juice of one lime over the mixture. Stir well to incorporate the flavors.
  6. Let the mixture simmer for about 5-7 minutes, allowing the flavors to meld and the ingredients to heat through.
  7. Taste the turkey taco filling and adjust the seasoning, lime juice, or spices according to your preferences.
  8. Wash and dry the lettuce leaves. Lay them out on a serving platter.
  9. Spoon a generous amount of the turkey taco mixture onto the center of each lettuce leaf.
  10. If desired, sprinkle shredded cheese, diced avocado, dollops of sour cream, or a drizzle of salsa over the turkey filling.
  11. Fold the sides of the lettuce leaves over the filling, then roll them up like a burrito, securing the wrap with a toothpick if needed.
