  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn kernels, drained
  • 1 can (15 oz) diced tomatoes with green chilies
  • 4 cups chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1 cup enchilada sauce
  • 1 cup shredded cheddar or Mexican blend cheese
  • Fresh cilantro, chopped, for garnish
  • Sour cream or Greek yogurt for serving (optional)
  • Sliced avocado for serving (optional)

 

INSTRUCTIONS

  1. Place the boneless, skinless chicken breasts in the bottom of the slow cooker.
  2. Add the chopped onion, minced garlic, red bell pepper, black beans, corn kernels, and diced tomatoes with green chilies on top of the chicken.
  3. In a small bowl, mix together the chili powder, ground cumin, paprika, dried oregano, salt, and black pepper. Sprinkle this seasoning mix over the ingredients in the slow cooker.
  4. Pour the chicken broth over the ingredients, ensuring that they are well submerged.
  5. Cover the slow cooker with the lid and cook on low heat for 6-8 hours or on high heat for 3-4 hours. The chicken should be tender and easily shred when cooked.
  6. Once the chicken is fully cooked, use two forks to shred it directly in the slow cooker.
  7. Pour in the enchilada sauce and stir to incorporate it into the soup.
  8. Add the shredded cheddar or Mexican blend cheese to the soup. Stir until the cheese is melted and incorporated.
