  • 1 cupful sugar
  • 1/2 cupful Crisco
  • 3/4 cupful chopped preserved ginger
  • 2 eggs
  • 1 cupful milk
  • 3 cupfuls flour
  • 3 teaspoonfuls baking powder
  • 1/2 teaspoonful salt

 

INSTRUCTIONS

  1. Preheat your oven to a hot temperature.
  2. In a mixing bowl, cream together the Crisco and sugar until well combined. Creaming involves beating the two ingredients together until they form a smooth and creamy mixture.
  3. Add the well-beaten eggs to the creamed mixture, mixing thoroughly to incorporate.
  4. Sift the flour, baking powder, and salt together in a separate bowl. Sifting helps aerate the dry ingredients and ensures even distribution of the baking powder.
  5. Alternately add the sifted dry ingredients and the milk to the creamed mixture. Begin and end with the dry ingredients. Mix after each addition until just combined. This step ensures a smooth batter without overmixing.
  6. Gently mix in the chopped preserved ginger, infusing the batter with its distinct flavor and texture.
  7. Grease and flour gem pans with Crisco to prevent sticking.
  8. Divide the batter evenly among the greased and floured gem pans.
  9. Place the pans in the preheated hot oven.
  10. Bake the Ginger Gems for approximately twenty-five minutes, or until they are golden brown and a toothpick or cake tester inserted into the center comes out clean.
  11. Once baked, remove the pans from the oven and allow the Ginger Gems to cool slightly.
