Superfoods No-Bake Cookies

I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

INGREDIENTS:

  • 1/2 cup coconut milk
  • 1/2 cup cocoa powder
  • 1/2 cup coconut oil
  • 1/2 cup raw honey
  • 2 cups finely shredded coconut
  • 1 cup large flake coconut
  • 2 tsp ground vanilla bean
  • 1/2 cup chopped almonds or chia seeds (optional)
  • 1/2 cup almond butter (optional)

 

 

INSTRUCTIONS:

  1. In a saucepan, combine the coconut milk, coconut oil, and cocoa powder.
  2. Cook the mixture over medium heat, stirring until it comes to a boil, then let it boil for 1 minute.
  3. Remove the saucepan from the heat.
  4. Stir in the finely shredded coconut, large flake coconut, raw honey, and ground vanilla bean.
  5. Optionally, add chopped almonds or chia seeds for added texture and flavor.
  6. For an extra nutty taste, add almond butter to the mixture (optional).
  7. Line a baking sheet with parchment paper.
  8. Spoon the mixture onto the parchment-lined baking sheet to form clusters or bars.
  9. Allow the coconut chocolate mixture to cool and set. You can refrigerate it to speed up the process.
  10. Once cooled and solidified, enjoy the delicious coconut chocolate clusters or bars!
