INGREDIENTS:

For the Crust:

  • See the almond flour pie crust recipe from the previous message.

For the Apple Filling:

  • 2 tbsp. coconut oil
  • 9 sour apples, peeled, cored, and cut into 1/4-inch thick slices
  • 1/4 cup coconut sugar or raw honey
  • 1/2 tsp. cinnamon
  • 1/8 tsp. sea salt
  • 1/2 cup coconut milk

For the Topping:

  • 1 cup ground nuts and seeds (you can use a mixture of almonds, walnuts, pecans, sunflower seeds, and pumpkin seeds)

 

 

INSTRUCTIONS:

For the Apple Filling:

  1. Melt coconut oil in a large pot over medium heat.
  2. Add apples, coconut sugar or raw honey, cinnamon, and sea salt.
  3. Increase heat to medium-high and cook, stirring occasionally, until apples release their moisture and the sugar is melted.
  4. Pour coconut milk over the apples and continue to cook until the apples are soft and the liquid has thickened, about 5 minutes, stirring occasionally.

Assembling the Pie:

  1. Preheat the oven to 375°F (190°C).
  2. Pour the apple filling into the prepared almond flour pie crust.
  3. Prepare the topping by mixing the ground nuts and seeds in a bowl.
  4. Sprinkle the nut and seed mixture evenly over the apple filling, covering the top of the pie.

Baking:

  1. Place a pie shield or aluminum foil over the edges of the crust to avoid burning.
  2. Bake the pie in the preheated oven until the topping is just turning golden brown.

Serving:

  1. Cool the pie slightly before serving.
  2. Optionally, you can serve the pie with a scoop of dairy-free vanilla ice cream or coconut whipped cream for added indulgence.
