Fall Lamb and Vegetable Stew

Serves :6-8

 

 

INGREDIENTS:

  • 2 pounds Lamb stew meat
  • 2 chopped Tomatoes
  • 1 Summer squash
  • 1 Zucchini
  • 1 cup Mushrooms, sliced
  • 1/2 cup Bell peppers, chopped
  • 1 cup Onions, chopped
  • 2 teaspoons Salt
  • 1 Garlic cloves, crushed
  • 1/2 tsp. Thyme leaves
  • 1 Bay leaves
  • 2 cups chicken broth

 

 

INSTRUCTIONS:

  1. Cut the summer squash and zucchini into bite-sized pieces.
  2. Place the chopped tomatoes, summer squash, zucchini, sliced mushrooms, chopped bell peppers, and onions in the crockpot.
  3. Add the lamb stew meat to the vegetables in the crockpot.
  4. In a separate bowl, mix the salt, crushed garlic, thyme leaves, and bay leaf into the chicken broth.
  5. Pour the seasoned chicken broth over the lamb and vegetables in the crockpot.
  6. Cover the crockpot and cook on low heat for 7 hours, allowing the flavors to meld and the lamb to become tender.
  7. Serve the lamb and vegetable stew over cooked brown rice for a hearty and delicious meal.

  1. Mediterranean Lamb Stew: Add Kalamata olives, artichoke hearts, and a sprinkle of feta cheese to the stew for a Mediterranean twist.
