INGREDIENTS:
- 1 onion, finely chopped
- 5 tbsp. coconut oil
- 2 chopped garlic cloves
- 2 chopped tomatoes
- Salt
- 1 tsp. sweet paprika
- A pinch of saffron
- 4 cleaned small squid, sliced
- 2 cups medium-grain brown rice
- 3 cups fish or chicken broth, plus more if needed
- 1 cup dry white wine
- 12 jumbo shrimps
- 16 mussels, scrubbed and debearded
INSTRUCTIONS:
- In a 16-inch paella pan, heat coconut oil over medium heat. Fry the chopped onion until soft.
- Stir in the chopped garlic and tomatoes. Add salt to taste, sweet paprika, and saffron. Stir well and cook until the tomatoes become soft.
- Add the sliced squid and rice to the pan. Stir well to coat the rice with the flavors.
- In a separate saucepan, bring the white wine and broth to a boil.
- Pour the boiling wine and broth over the rice in the paella pan. Bring to a boil, add salt as needed, and spread the rice evenly in the pan.
- Cook the rice over low heat for 20 minutes. After 10 minutes, place the jumbo shrimps on top of the rice. Turn the shrimps once they become pink.
- When the rice is cooked and the liquid is absorbed, turn off the heat and cover the pan.
- Steam the mussels separately until they open.
- Place the steamed mussels on top of the paella before serving.
