I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

 

INGREDIENTS:

  • 1 onion, finely chopped
  • 5 tbsp. coconut oil
  • 2 chopped garlic cloves
  • 2 chopped tomatoes
  • Salt
  • 1 tsp. sweet paprika
  • A pinch of saffron
  • 4 cleaned small squid, sliced
  • 2 cups medium-grain brown rice
  • 3 cups fish or chicken broth, plus more if needed
  • 1 cup dry white wine
  • 12 jumbo shrimps
  • 16 mussels, scrubbed and debearded

 

INSTRUCTIONS:

  1. In a 16-inch paella pan, heat coconut oil over medium heat. Fry the chopped onion until soft.
  2. Stir in the chopped garlic and tomatoes. Add salt to taste, sweet paprika, and saffron. Stir well and cook until the tomatoes become soft.
  3. Add the sliced squid and rice to the pan. Stir well to coat the rice with the flavors.
  4. In a separate saucepan, bring the white wine and broth to a boil.
  5. Pour the boiling wine and broth over the rice in the paella pan. Bring to a boil, add salt as needed, and spread the rice evenly in the pan.
  6. Cook the rice over low heat for 20 minutes. After 10 minutes, place the jumbo shrimps on top of the rice. Turn the shrimps once they become pink.
  7. When the rice is cooked and the liquid is absorbed, turn off the heat and cover the pan.
  8. Steam the mussels separately until they open.
  9. Place the steamed mussels on top of the paella before serving.

  5. Paella with Saffron Rice: Instead of adding saffron directly to the dish, use saffron-infused rice for a more intense saffron flavor.
  6. Paella with Chorizo: Include slices of Spanish chorizo sausage to add a rich and smoky flavor to the dish.
  7. Paella with Herbs: Experiment with different herbs like thyme, rosemary, or cilantro to enhance the flavors of the dish.
  8. Paella with Arborio Rice: Substitute the medium-grain brown rice with Arborio rice to achieve a creamier texture.
  9. Paella with Lemon Zest: Add some lemon zest to the dish to brighten up the flavors.
  10. Paella with Roasted Red Peppers: Include roasted red peppers for a sweeter taste and vibrant color.
