INGREDIENTS:

  • 1-1/2 cups tomato paste
  • 1/4 cup lemon juice
  • 2 tbsp. mustard
  • 1/2 tsp. salt
  • 1/4 tsp. ground black pepper
  • 1/4 cup chunky almond butter
  • 2 cubed sweet potatoes
  • 1/2 tsp. minced garlic
  • 4 pounds boneless chuck roast

 

INSTRUCTIONS:

  1. In a large bowl, combine tomato paste, lemon juice, almond butter, and mustard. Mix until well combined.
  2. Stir in salt, ground black pepper, and minced garlic, ensuring the spices are evenly distributed throughout the mixture.
  3. Add the cubed sweet potatoes to the bowl, and toss them with the tomato mixture, making sure they are well coated.
  4. Place the boneless chuck roast in a slow cooker, ensuring it fits comfortably in the pot.
  5. Pour the tomato mixture over the chuck roast, covering it with the sauce.
  6. Cover the slow cooker with its lid and cook on low heat for 7 to 9 hours, allowing the flavors to meld and the meat to become tender and juicy.
  7. After the cooking time is up, remove the chuck roast from the slow cooker and shred it into smaller pieces using a fork.
  8. Return the shredded meat to the slow cooker, stirring it to ensure it is evenly coated with the sauce and sweet potatoes.
  9. Continue cooking the mixture for approximately 1 more hour to allow the flavors to meld and the meat to absorb the sauce.
  10. Serve the tender and flavorful chuck roast with the delicious tomato-almond butter sauce and sweet potatoes. Enjoy!

Here are some variations of the chuck roast recipe:
