Meat Stew with Red Beans

Serves :8

 

INGREDIENTS:

  • 3 tbsp. olive oil or avocado oil
  • 1/2 chopped onion
  • 1 lb lean cubed stewing beef
  • 2 tsp. ground cumin
  • 2 tsp. ground turmeric (optional)
  • 1/2 tsp. ground cinnamon (optional)
  • 2 1/2 cups water
  • 5 tbsp. chopped fresh parsley
  • 3 tbsp. snipped chives
  • 2 cups cooked kidney beans
  • 1 lemon, juice of
  • 1 tbsp. almond flour
  • Salt and black pepper

 

INSTRUCTIONS:

  1. Sauté the chopped onion in a pan with two tablespoons of olive oil or avocado oil until tender.
  2. Add the cubed stewing beef to the pan and cook until the meat is browned on all sides.
  3. Stir in ground turmeric and ground cumin. If desired, add ground cinnamon for extra flavor. Cook the spices with the meat for one minute.
  4. Pour in the water and bring the mixture to a boil.
  5. Cover the pan with a lid and simmer the beef over low heat for 45 minutes. Stir occasionally to ensure even cooking.
  6. In a separate pan, sauté chopped fresh parsley and snipped chives with the remaining 1 tbsp. of olive oil for about 2 minutes.
  7. Add the sautéed herb mixture to the beef in the pan.
  8. Stir in the cooked kidney beans and lemon juice.
  9. Season the stew with salt and black pepper to taste.
  10. In a small bowl, mix one tablespoon of almond flour with a bit of water to form a thickening paste.
  11. Stir the almond flour mixture into the stew to thicken the sauce.
  12. Simmer the stew uncovered for an additional half an hour or until the meat becomes tender.
  13. Serve the flavorful stew with brown rice for a hearty and satisfying meal. Enjoy!

Here are some variations of the beef stew recipe:

  1. Spicy Beef Stew: Add diced jalapenos or red pepper flakes for some heat. You can also include a diced chipotle pepper in adobo sauce for a smoky and spicy twist.
  2. Moroccan-Inspired Stew: Enhance the exotic flavors by adding dried apricots, raisins, and a pinch of ground ginger to the stew. Serve it over couscous instead of brown rice.
  3. Italian Beef Stew: Replace the cumin and turmeric with Italian herbs like oregano, basil, and thyme. Add a can of diced tomatoes and some red wine for richness. Serve with polenta or pasta.
  4. Mexican Beef Stew: Use chili powder, paprika, and cayenne pepper instead of the cumin and turmeric. Add diced bell peppers, corn, and black beans to the stew. Top it with sliced avocado and a dollop of sour cream before serving.
  5. Asian Beef Stew: Swap the turmeric and cumin for soy sauce and grated ginger. Add sliced shiitake mushrooms and baby corn to the stew. Serve it over jasmine rice and garnish with chopped green onions.
  6. Mediterranean Beef Stew: Use diced tomatoes, olives, and artichoke hearts to give the stew a Mediterranean flair. Season with dried oregano, basil, and a touch of balsamic vinegar.
  7. Coconut Curry Beef Stew: Create a creamy curry by adding coconut milk and red curry paste to the stew. Garnish with fresh cilantro and serve over steamed jasmine or basmati rice.
  8. Irish Beef Stew: Add diced potatoes and sliced carrots to the stew. Use Guinness beer or beef broth as the liquid and simmer until the beef and vegetables are tender.
  9. Greek Beef Stew: Use Greek seasoning or a blend of dried oregano, lemon zest, and garlic to flavor the stew. Add Kalamata olives, sun-dried tomatoes, and crumbled feta cheese before serving.
