INGREDIENTS:
- 2 large eggplants
- 3 medium zucchinis
- 2 medium onions
- 2 red or green peppers
- 4 large tomatoes
- 2 cloves garlic, crushed
- 4 tbsp. coconut oil
- 1 tbsp. fresh basil
- Salt and freshly milled black pepper
INSTRUCTIONS:
- Cut the eggplant and zucchini into 1-inch slices, then cut each slice in half. Salt the eggplant and zucchini and leave them for one hour to draw out the bitterness.
- Chop the red or green peppers and onions.
- Skin the tomatoes by boiling them for a few minutes. Quarter the tomatoes, take out the seeds, and chop the flesh.
- In a saucepan, heat 4 tbsp. of coconut oil and fry the crushed garlic and onions for about 10 minutes.
- Add the chopped peppers to the saucepan and continue cooking.
- Dry the eggplant and zucchini and add them to the saucepan.
- Stir in the fresh basil, salt, and freshly ground black pepper. Simmer for half an hour.
- After half an hour, add the chopped tomato flesh to the saucepan. Check the seasoning and adjust with salt and pepper if needed.
- Cook for an additional 15 minutes with the lid off to allow the flavors to meld together.
