Serves: 4-6

 

INGREDIENTS:

  • 2 large eggplants
  • 3 medium zucchinis
  • 2 medium onions
  • 2 red or green peppers
  • 4 large tomatoes
  • 2 cloves garlic, crushed
  • 4 tbsp. coconut oil
  • 1 tbsp. fresh basil
  • Salt and freshly milled black pepper

 

INSTRUCTIONS:

  1. Cut the eggplant and zucchini into 1-inch slices, then cut each slice in half. Salt the eggplant and zucchini and leave them for one hour to draw out the bitterness.
  2. Chop the red or green peppers and onions.
  3. Skin the tomatoes by boiling them for a few minutes. Quarter the tomatoes, take out the seeds, and chop the flesh.
  4. In a saucepan, heat 4 tbsp. of coconut oil and fry the crushed garlic and onions for about 10 minutes.
  5. Add the chopped peppers to the saucepan and continue cooking.
  6. Dry the eggplant and zucchini and add them to the saucepan.
  7. Stir in the fresh basil, salt, and freshly ground black pepper. Simmer for half an hour.
  8. After half an hour, add the chopped tomato flesh to the saucepan. Check the seasoning and adjust with salt and pepper if needed.
  9. Cook for an additional 15 minutes with the lid off to allow the flavors to meld together.

 

Note:

This delicious vegetable medley can be served as a side dish, over rice, or even with crusty bread for a satisfying vegetarian meal. Enjoy the flavorful combination of eggplant, zucchini, peppers, onions, and tomatoes enhanced by the aromatic garlic and basil!
