• 1 chopped carrot

• 4 pounds boneless chuck roast
INSTRUCTIONS:
- In a large bowl, combine tomato paste, lemon juice, and mustard. Stir in salt, pepper, and minced garlic.
- Place the boneless chuck roast and chopped carrot in a slow cooker.
- Pour the tomato mixture over the chuck roast and carrot in the slow cooker.
- Cover the slow cooker with the lid and cook on low heat setting for 7 to 9 hours. This slow cooking process will allow the flavors to develop and the meat to become tender.
- After the cooking time is complete, carefully remove the chuck roast from the slow cooker and use a fork to shred the meat into smaller pieces.
- Return the shredded meat to the slow cooker and stir it to evenly coat the meat with the flavorful sauce.
- Continue cooking the chuck roast with the sauce for approximately 1 more hour on low heat setting to further enhance the flavors.
- Once the additional cooking time is complete, the dish is ready to be served. You can serve the shredded chuck roast and sauce over rice, mashed potatoes, or your choice of side dish.
