Creamy Tomato Basil Soup

About

Brenda Gantt

I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

Serves: 6

INGREDIENTS:

  • 4 tomatoes – peeled, seeded, and diced
  • 4 cups tomato juice*
  • 14 leaves fresh basil
  • 1 cup coconut cream
  • Salt, to taste
  • Ground black pepper, to taste

INSTRUCTIONS:

  1. In a stockpot, combine the diced tomatoes and tomato juice.
  2. Simmer the mixture over medium heat for about 30 minutes, allowing the flavors to meld.
  3. Using a food processor or blender, puree the tomato mixture along with the fresh basil leaves until smooth and well combined.
  4. Return the pureed mixture to the stockpot and add the coconut cream. Stir well to incorporate.
  5. Season the soup with salt and ground black pepper to taste, adjusting the seasoning according to your preference.
  6. Heat the soup again over low heat, just until warmed through.

Here are some variations you can try to customize the tomato basil soup recipe:

1. Roasted Tomato Basil Soup:

  • Instead of using fresh tomatoes, roast them in the oven until caramelized before adding them to the stockpot. Roasting will bring out their natural sweetness and add depth to the flavor.

2. Creamy Tomato Basil Soup with Parmesan:

  • Stir in some freshly grated Parmesan cheese into the soup after adding the coconut cream. The cheese will enhance the richness and add a savory note to the soup.

3. Spicy Tomato Basil Soup:

  • Add a dash of red pepper flakes or a chopped chili pepper to the soup while simmering for a kick of heat and extra spice.

4. Tomato Basil Soup with Vegetables:

  • Enhance the soup’s nutritional profile by adding other vegetables like carrots, celery, or bell peppers. Simply sauté these vegetables along with the tomatoes before simmering.

5. Tomato Basil Soup with Herbs:

  • Experiment with other fresh herbs like oregano, thyme, or parsley to complement the basil and add different layers of flavor.

6. Tomato Basil Soup with Coconut Milk:

  • If you prefer a lighter version, replace the coconut cream with coconut milk for a slightly thinner consistency.

7. Tomato Basil Soup with a Creamy Garnish:

  • Before serving, top each bowl of soup with a dollop of Greek yogurt, sour cream, or vegan yogurt for an extra creamy texture.

8. Tomato Basil Soup with Croutons:

  • Make or purchase some garlic or herb croutons and add them as a crunchy topping to the soup.

9. Tomato Basil Soup with Protein:

  • Add cooked shredded chicken, diced tofu, or cooked lentils to make the soup heartier and add a source of protein.

10. Tomato Basil Soup with Grilled Cheese Croutons:

  • Serve the soup with small grilled cheese sandwiches cut into bite-sized pieces to create a delightful twist on a classic pairing.
