Egg-Drop Soup

I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

Serves :4-6

 

INGREDIENTS:

  • 1 1/2 quarts chicken broth
  • 2 tablespoons tapioca flour, mixed in 1/4 cup cold water
  • 2 eggs, slightly beaten with a fork
  • 2 scallions, chopped, including green ends

 

INSTRUCTIONS:

  1. Bring the chicken broth to a boil in a saucepan.
  2. Slowly pour in the tapioca flour mixture while stirring the broth. Continue stirring until the broth thickens.
  3. Reduce the heat to low and let the broth simmer for a few minutes.
  4. Slowly mix in the beaten eggs while stirring the broth. Make sure to pour the eggs in a thin stream to create ribbons in the soup.
  5. As soon as the last drop of egg is in, turn off the heat to prevent overcooking the eggs.
  6. Serve the soup in bowls and garnish with chopped scallions on top.
