• 1/2 cup of flax seeds meal
• 1kg tomatoes, diced
• 1 red pepper and 1 green pepper, diced
• 1 cucumber, peeled and diced
• 2 cloves of garlic, peeled and crushed
• 150ml extra virgin olive oil or avocado oil
• 2 tbsp lemon juice
• Salt, to taste
INSTRUCTIONS:
- In the bowl of a blender, combine the diced tomatoes, red pepper, green pepper, cucumber, and crushed garlic.
- Add the extra virgin olive oil or avocado oil to the mixture in the blender.
- Next, add the flax seeds meal to the blender.
- Blend the mixture until smooth, creating a creamy and flavorful base for the soup.
- Taste the soup and add salt to your preferred level of seasoning.
- Stir in the lemon juice, which will add a tangy and refreshing twist to the soup.
- Once all the ingredients are well incorporated, transfer the soup to a container and refrigerate until well chilled.
