Serves :4

 

INGREDIENTS:

• 1/2 cup of flax seeds meal

• 1kg tomatoes, diced

• 1 red pepper and 1 green pepper, diced

• 1 cucumber, peeled and diced

• 2 cloves of garlic, peeled and crushed

• 150ml extra virgin olive oil or avocado oil

• 2 tbsp lemon juice

• Salt, to taste

 

INSTRUCTIONS:

  1. In the bowl of a blender, combine the diced tomatoes, red pepper, green pepper, cucumber, and crushed garlic.
  2. Add the extra virgin olive oil or avocado oil to the mixture in the blender.
  3. Next, add the flax seeds meal to the blender.
  4. Blend the mixture until smooth, creating a creamy and flavorful base for the soup.
  5. Taste the soup and add salt to your preferred level of seasoning.
  6. Stir in the lemon juice, which will add a tangy and refreshing twist to the soup.
  7. Once all the ingredients are well incorporated, transfer the soup to a container and refrigerate until well chilled.
  8. When ready to serve, garnish the chilled soup with black olives, hard-boiled egg, cilantro, mint, or parsley according to your taste preferences.

VARIATIONS:
