It traditionally consists of a graham cracker crust filled with a mixture of sweetened condensed milk, egg yolks, and freshly squeezed Key lime juice.

Coconut & Lime Pie builds upon the basic concept of key lime pie by introducing creamy coconut milk and the tropical essence of coconut extract to the filling. The addition of avocado in the filling adds richness and creaminess while contributing to the delightful green hue of the pie.

INGREDIENTS

FOR CRUST:

  • 1 cup unsalted pistachios
  • 2 tbsp Agave Nectar
  • Pinch of salt

 

FOR FILLING:

  • 1 can coconut milk (cream only), chilled overnight.
  • 1 avocado
  • 1 cup + 2 tbsp Agave Nectar
  • 1/3 cup fresh lime juice
  • 1 tsp coconut extract
  • Zest of 1 lime

 

TOPPING:

  • 1 can coconut milk (cream only), chilled overnight
  • 1/3 cup powdered sugar

 

INSTRUCTIONS

CRUST:

  1. Lightly spray four small tart pans.
  2. In a food processor, mix the pistachios, agave nectar, and salt until the pistachios are ground up and hold together.
  3. Divide the crust mixture evenly between the four tart pans or muffin tins. Press the crust into the bottom of the pans and set aside.

 

FILLING:

  1. In a food processor, combine the coconut milk cream (solid part only), avocado, agave nectar, lime juice, coconut extract, and lime zest.
  2. Mix the ingredients until well combined and smooth. Scoop the filling into the prepared tart shells, filling them almost to the top. Place the tarts in the freezer.

 

TOPPING:

  1. Use the second can of chilled coconut milk, spooning out only the solid cream. Whisk it together with powdered sugar until it resembles whipped cream.
  2. Remove the cream pies from the freezer and create a smooth top with the coconut whipped cream.
  3. Place the pies back in the freezer and allow them to set up.

 

FINAL STEP:

  1. When ready to serve, remove the pies from the freezer, take them out of the tart pans, and allow them to sit for 15-20 minutes before eating.
