INGREDIENTS

  • 2 cups all-purpose flour
  • 1/4 cup brown sugar, packed
  • 1/4 teaspoon salt
  • 3/4 cup cold butter, cubed
  • 2 eggs
  • 1 1/2 cups corn syrup
  • 1 cup sugar
  • 1 tablespoon flour
  • 2 tablespoons butter, melted
  • 1 1/2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 2 cups chopped pecans
  • 6 ounces semi-sweet chocolate chips

 

INSTRUCTIONS

  1. Preheat the oven to 350°F (175°C). In a large bowl, mix the all-purpose flour, brown sugar, and salt. Cut in the cold butter using a pastry cutter or food processor until the mixture resembles coarse crumbs.
  2. Press the mixture into a greased 9×13 inch baking pan. Bake for 15-20 minutes, or until the edges are lightly golden brown.
  3. While the crust is baking, beat together the eggs, corn syrup, sugar, flour, melted butter, vanilla extract, and salt in a separate bowl. Stir in the chopped pecans.
  4. Remove the crust from the oven and spread the semi-sweet chocolate chips evenly over the warm crust.
  5. Spread the pecan filling over the chocolate chips.
  6. Cover the pan with foil and return it to the oven. Bake for 15 minutes, then remove the foil and bake for an additional 15-20 minutes or until the filling is set, bubbling, and a knife inserted 1-inch from the edge comes out clean.
  7. Remove the pan from the oven and let the bars cool before serving.
  8. Once cooled completely in the pan on a wire rack, cut the bars into squares.
