INGREDIENTS
- 115 grams unsalted butter, room temperature
- 90 grams brown sugar
- 50 grams caster sugar
- 1 teaspoon vanilla extract
- 140 grams plain flour
- 2-3 tablespoons milk
- 75 grams milk or dark chocolate chips
- 525 grams good quality dark chocolate
INSTRUCTIONS
- Line a muffin tray with cupcake liners. Also, line a cookie sheet or baking tray with parchment or baking paper.
- In a large mixing bowl, cream the softened unsalted butter, brown sugar, and caster sugar using an electric mixer for about 3-4 minutes until the mixture becomes pale and creamy. Add the vanilla extract and beat again to incorporate.
- Sift in the plain flour and stir with a wooden spoon or plastic spatula. Gradually add the milk, one tablespoon at a time, until a soft dough forms. Stir in the milk or dark chocolate chips until evenly distributed in the dough.
- Roll small balls of the cookie dough and place them on the prepared tray. Once all the dough is used, refrigerate the tray while melting the chocolate.
- Place a small saucepan on medium heat with about 5cm or 2 inches of water in the bottom. Place the dark chocolate in a small heatproof bowl and set the bowl on top of the saucepan, ensuring the bottom of the bowl doesn’t touch the water below. Gently stir the chocolate as the steam melts it, creating a silky and smooth texture.
- Once the chocolate is completely melted, remove the saucepan from the heat, but keep the bowl on top to maintain the chocolate’s temperature. Retrieve the cookie dough from the fridge.
- Add approximately 1-2 teaspoons of melted chocolate into the bottom of each cupcake liner, ensuring it covers the entire base. Flatten a cookie dough ball using your fingers and place it on top of the chocolate, making sure it doesn’t touch the side of the liner.
- Repeat the process for all the cookie dough and chocolate cups. Then, spoon more melted chocolate over each piece of cookie dough, fully covering it.
- Refrigerate the chocolate cups for at least one hour or until they are set. Store the Chocolate Cups in the refrigerator to keep them fresh and delightful.
Now, savor the joy of Chocolate Cups with their rich chocolate coating and buttery cookie dough centers. These delightful treats are perfect for sharing with friends and family, bringing smiles to faces, and creating memorable moments during gatherings and celebrations. Indulge in the goodness of homemade chocolate delights and cherish the art of crafting sweet delights that delight both the eyes and the taste buds.
