INGREDIENTS:
- 4 oz Shortcrust pastry
- 1/2 pint Milk
- 1 Tbs Chopped parsley
- Seasoning (salt and pepper)
- 1 Desertspoon full plain flour
- 2 Eggs
- 2 oz Chopped steaky bacon (or cold boiled bacon)
INSTRUCTIONS:
- Preheat the oven to Gas Mark 6 (400°F / 200°C).
- Line a flan ring or pie dish with the prepared pastry.
- Bake the pastry blind in the preheated oven for 15 minutes until it is partially cooked and lightly golden.
- In a separate bowl, blend the flour with a little milk to form a smooth paste.
- Break the eggs into another bowl and beat them well. Add the blended flour mixture and the remaining milk to the beaten eggs.
- Season the egg mixture with salt and pepper to taste. Stir in the chopped parsley.
- If you are using raw steaky bacon, lightly fry it in a pan until cooked. If using cold boiled bacon, you can skip this step.
- Place the cooked bacon or cold boiled bacon evenly in the partially baked pastry case.
- Pour the egg mixture over the bacon in the pastry case.
- Reduce the oven temperature to Gas Mark 3 (325°F / 160°C).
- Bake the bacon and egg quiche in the preheated oven at Gas Mark 3 for 30-35 minutes or until the quiche is set and lightly browned on top.
- Once baked, remove the quiche from the oven and allow it to cool slightly before serving.
