INGREDIENTS:

  • 1 Onion
  • 1 Green bell pepper
  • 1 Clove garlic
  • 1 lb Ground beef
  • Salt and pepper
  • 1 1/2 cup Tomato sauce
  • 1 tsp Dried oregano
  • 1/2 tsp Dried thyme
  • 1/2 lb Spaghetti
  • 7 oz Jar roasted red peppers
  • 1/4 cup Fresh parsley, chopped

 

INSTRUCTIONS:

  1. Chop the onion and green pepper. Mince the garlic.
  2. In a large frying pan, cook the ground beef over medium-high heat until browned.
  3. Reduce the heat to low, add the chopped onion, green pepper, minced garlic, salt, and pepper to taste. Cook until the vegetables are tender, about 10 minutes.
  4. Stir the tomato sauce, dried oregano, and dried thyme into the meat mixture. Cook until the sauce has thickened, about 10 minutes.
  5. Meanwhile, cook the spaghetti in a large pot of boiling salted water until it is just done. Drain the spaghetti.
  6. Drain the jar of roasted red peppers and cut them into long strips. Add the red pepper strips to the sauce and cook until heated through.
  7. Taste the sauce for seasoning and add more salt and pepper if needed.
  8. Pour the sauce over the cooked spaghetti and toss to combine.
  9. Sprinkle the chopped fresh parsley over the spaghetti and sauce before serving.
