INGREDIENTS

  • 1½ pounds boneless, skinless chicken breasts
  • 3 tablespoons lime juice
  • 1 tablespoon chili powder
  • 1 cup frozen corn
  • 1 cup chunky salsa
  • 12 flour tortillas (6 inches), warmed
  • Sour cream, shredded cheddar cheese, and shredded lettuce (optional)

 

INSTRUCTIONS

  1. Place the boneless, skinless chicken breasts in a 3-qt. slow cooker.
  2. In a separate bowl, combine the lime juice and chili powder, then pour the mixture over the chicken in the slow cooker.
  3. Cover the slow cooker and cook on low for 5-6 hours, or until the chicken is tender.
  4. Remove the chicken from the slow cooker and let it cool slightly. Shred the chicken using two forks, then return it to the slow cooker and heat through.
  5. Stir in the frozen corn and chunky salsa.
  6. Cover the slow cooker again and cook on low for an additional 30 minutes, or until heated through.
  7. Serve the lime chicken mixture in the warmed flour tortillas.
  8. Optionally, garnish the tacos with sour cream, shredded cheddar cheese, and shredded lettuce, according to personal preference.
