INGREDIENTS

  • 2 pounds lean boneless pork, cut into 1½-inch cubes
  • 1 tablespoon canola oil
  • 4 cups chicken broth, divided
  • 3 cans (11 ounces each) whole kernel corn, drained
  • 2 celery ribs, diced
  • 2 medium potatoes, peeled and diced
  • 2 medium tomatoes, diced
  • 3 cans (4 ounces each) chopped green chilies
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt (optional)
  • 3 tablespoons all-purpose flour
  • Cornbread or warmed flour tortillas (optional)

 

INSTRUCTIONS

  1. In a 5-qt. Dutch oven, heat the canola oil over medium-high heat. Brown the cubes of pork in the hot oil.
  2. Add 3½ cups of chicken broth, whole kernel corn, diced celery, diced potatoes, diced tomatoes, chopped green chilies, ground cumin, dried oregano, and salt (if desired) to the Dutch oven. Bring the mixture to a boil, then reduce the heat, cover the Dutch oven, and simmer for 1 hour or until the pork and vegetables are tender.
  3. In a separate bowl, combine the all-purpose flour and the remaining ½ cup of chicken broth, stirring until well mixed. Stir this mixture into the stew.
  4. Bring the stew to a boil and cook, stirring constantly, until it thickens to the desired consistency.
  5. Serve the Green Chili Pork Stew with cornbread or warmed flour tortillas, if desired.
