INGREDIENTS

  • 4 cups cooked chicken, shredded or diced
  • 1 cup celery, finely chopped
  • 1 cup onion, finely chopped
  • 1 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional for added heat)
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup slivered almonds

 

INSTRUCTIONS

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the cooked chicken, finely chopped celery, finely chopped onion, mayonnaise, Dijon mustard, lemon juice, salt, black pepper, garlic powder, paprika, and cayenne pepper (if desired). Mix well, ensuring all the ingredients are thoroughly combined.
  3. Transfer the chicken mixture to a greased 9×13-inch baking dish, spreading it out evenly.
  4. Sprinkle the shredded cheddar cheese over the top of the chicken mixture, followed by the slivered almonds.
  5. Place the baking dish in the preheated oven and bake for approximately 20-25 minutes, or until the cheese has melted and turned golden brown, and the dish is heated through.
  6. Once the Hot Chicken Salad is fully cooked, remove it from the oven and let it cool slightly before serving.
  7. Serve the Hot Chicken Salad as a main course with a side of fresh greens or on toasted bread as a sandwich. It can also be enjoyed as a dip with crackers or vegetable sticks for a delightful appetizer.
