INGREDIENTS

  • 1 ½ pounds ground beef
  • 1 cup bread crumbs
  • ½ cup milk
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 carrot, grated
  • 1 celery stalk, finely chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 1 large egg
  • 1 cup sour cream

 

INSTRUCTIONS

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the ground beef, bread crumbs, milk, chopped onion, minced garlic, grated carrot, chopped celery, fresh parsley, fresh thyme, dried oregano, salt, black pepper, paprika, and the large egg. Mix well, ensuring all the ingredients are evenly incorporated.
  3. Lightly grease a loaf pan or line it with parchment paper to prevent sticking.
  4. Transfer the meat mixture to the loaf pan, pressing it down gently to ensure there are no air pockets.
  5. Bake the meat loaf in the preheated oven for approximately 50-60 minutes, or until the internal temperature reaches 160°F (71°C).
  6. While the meat loaf is baking, prepare the cooling sauce. In a small bowl, combine the sour cream with an additional tablespoon of fresh parsley.
  7. Once the meat loaf is fully cooked, remove it from the oven and let it rest for 5-10 minutes to allow the juices to redistribute.
  8. Slice the meat loaf and serve it with a dollop of the cooling sour cream sauce on top or as a side.
