INGREDIENTS

  • 3 garlic cloves, minced
  • 1 teaspoon minced shallot
  • 1 cup orange juice
  • 1 tablespoon balsamic vinegar
  • 3 tablespoons honey
  • 1 tablespoon ground ancho chili pepper
  • ¼ teaspoon salt
  • ⅛ teaspoon pepper
  • 1 salmon fillet (1 pound)
  • 2 teaspoons canola oil
  • 2 tablespoons minced fresh cilantro

 

INSTRUCTIONS

  1. In a small saucepan coated with cooking spray, sauté the minced garlic and minced shallot until tender.
  2. Add the orange juice and balsamic vinegar to the saucepan. Bring the mixture to a boil, then reduce the heat and simmer, uncovered, for 20-25 minutes or until the liquid is reduced to ¼ cup.
  3. Stir in the honey, ground ancho chili pepper, salt, and pepper to the reduced orange juice mixture. Mix well to combine the flavors.
  4. In a large ovenproof skillet, heat the canola oil over medium-high heat. Brown the salmon fillet on both sides until lightly golden.
  5. Brush ¼ cup of the prepared sauce onto the browned salmon fillet. Transfer the skillet to a preheated oven and bake, uncovered, at 400°F for 8-10 minutes or until the fish flakes easily with a fork.
  6. Brush the remaining sauce over the baked salmon fillet. Sprinkle minced fresh cilantro on top for added freshness and garnish. Serve the California Scrumptious Salmon immediately as a main course, accompanied by your choice of side dishes or a fresh salad.
