Pizzelle, also known as Italian waffle cookies, are delicate, intricate treats that have captivated taste buds for centuries. The history of pizzelle can be traced back to ancient Roman times, where flat cakes were prepared on hot stones and flavored with honey and spices. Over the centuries, these cakes evolved into thin, wafer-like cookies, known today as pizzelle. The name “pizzelle” is derived from the Italian word “pizze,” meaning round and flat.

Pizzelle gained popularity in medieval Europe, particularly in regions of Italy, where they were often prepared during festive occasions and celebrations. Initially, pizzelle were made by hand using irons with intricate designs that reflected the artistry and craftsmanship of the bakers.

INGREDIENTS

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted and cooled
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • Optional: Anise extract or other flavorings of your choice (e.g., almond, lemon, or orange)
  • Powdered sugar, for dusting (optional)

 

INSTRUCTIONS

  1. Preheat a pizzelle iron according to the manufacturer’s instructions. The iron should be hot and ready before you begin.
  2. In a medium bowl, whisk together the flour and baking powder. Set aside.
  3. In a large mixing bowl, beat the sugar and melted butter until well combined.
  4. Add the eggs to the sugar and butter mixture, one at a time, beating well after each addition.
  5. Stir in the vanilla extract and any optional flavorings you desire, such as anise extract or other extracts of your choice.
  6. Gradually add the flour mixture to the wet ingredients, stirring until the batter is smooth and well incorporated. The batter should be thick and sticky.
  7. Drop spoonfuls of the batter onto the preheated pizzelle iron, placing them slightly off-center to allow room for spreading.
  8. Close the iron and press it firmly to flatten the batter. Cook the pizzelle for about 30-45 seconds, or until golden brown and crisp.
  9. Carefully remove the pizzelle from the iron using a spatula or tongs, as they will be hot. Place them on a wire rack to cool completely.
  10. Repeat the process with the remaining batter, ensuring that the pizzelle iron is properly heated before each batch.
  11. Once the pizzelle have cooled completely, you can dust them with powdered sugar for an extra touch of sweetness, if desired.
  12. Serve the pizzelle as delicate cookies on their own, or use them to create delightful dessert sandwiches by filling them with whipped cream, Nutella, or your favorite jam.
