His efforts to develop a hardy grape variety led to the creation of the Concord grape, which quickly gained popularity for its unique taste and versatility.

  • 4 cups Concord grapes, stemmed
  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 tablespoon lemon juice
  • 1 tablespoon unsalted butter, cut into small pieces
  • 2 pie crusts (store-bought or homemade)

 

INSTRUCTIONS

  1. Preheat your oven to 425°F (220°C).
  2. Remove the grapes from their stems and rinse them thoroughly. Set them aside.
  3. In a large mixing bowl, combine the granulated sugar, flour, and salt. Mix well to ensure the dry ingredients are evenly incorporated.
  4. Add the Concord grapes to the bowl and gently toss them with the dry mixture until the grapes are coated.
  5. Stir in the lemon juice, ensuring it is evenly distributed among the grape mixture.
  6. Line a 9-inch pie dish with one of the pie crusts, pressing it gently against the bottom and sides.
  7. Pour the grape filling into the prepared pie crust, ensuring it is evenly spread.
  8. Dot the top of the filling with small pieces of unsalted butter.
  9. Cover the pie with the second pie crust. You can either place it on top as a whole crust or create a lattice pattern by weaving strips of dough.
  10. Trim any excess dough hanging over the edges of the pie dish and crimp the edges to seal the pie.
  11. Make a few small slits or decorative cutouts on the top crust to allow steam to escape during baking.
  12. Place the pie on a baking sheet to catch any potential spills and bake in the preheated oven for 15 minutes.
  13. After 15 minutes, reduce the oven temperature to 375°F (190°C) and continue baking for an additional 30 to 35 minutes, or until the crust is golden and the filling is bubbly.
  14. Once baked, remove the pie from the oven and let it cool completely on a wire rack before serving.
