  • 4 bone-in, skin-on chicken thighs
  • 1 cup wild rice, rinsed and drained
  • 2 cups chicken broth
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 red bell pepper, diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon dried sage
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, for garnish

 

INSTRUCTIONS

PREPARING THE WILD RICE:

  1. In a medium-sized saucepan, heat 1 tablespoon of unsalted butter and 1 tablespoon of olive oil over medium heat.
  2. Add the rinsed wild rice to the saucepan, stirring to coat the grains with the butter and oil.
  3. Pour in the chicken broth, bringing it to a gentle boil. Reduce the heat to low, cover the saucepan with a lid, and simmer the wild rice for approximately 40-45 minutes or until the grains are tender and have absorbed the liquid.
  4. Once cooked, fluff the wild rice with a fork and set it aside.

 

SAUTEING THE VEGETABLES:

  1. In a large, heavy-bottomed skillet or Dutch oven, heat the remaining 1 tablespoon of unsalted butter over medium heat.
  2. Add the chopped onion to the skillet and sauté until it becomes soft and translucent.
  3. Stir in the minced garlic, cooking for an additional minute until its fragrance is released.
  4. Add the diced carrots, celery, and red bell pepper to the skillet, sautéing the vegetables until they become tender and slightly caramelized.

 

COOKING THE CHICKEN:

  1. Season the bone-in, skin-on chicken thighs with dried thyme, dried rosemary, dried sage, salt, and freshly ground black pepper, ensuring even seasoning on all sides.
  2. Push the sautéed vegetables to the edges of the skillet, creating a space in the center for the chicken thighs.
  3. Place the seasoned chicken thighs in the center of the skillet, skin-side down, allowing them to sear and develop a golden brown crust for approximately 4-5 minutes.
  4. Carefully flip the chicken thighs and sear the other side for an additional 4-5 minutes until they are evenly browned.

 

COMBINING THE COMPONENTS:

  1. Preheat the oven to 375°F (190°C).
  2. Nestle the seared chicken thighs into the sautéed vegetables in the skillet, allowing the flavors to meld together.
  3. Transfer the skillet to the preheated oven and let the Wild Rice Chicken Dinner bake for approximately 20-25 minutes or until the chicken thighs are fully cooked and reach an internal temperature of 165°F (74°C).
