About

Brenda Gantt

I am a self-taught cook. I started cooking around 18 years old. I stood in the kitchen and watched my mother, who was my biggest inspiration at the time, cook.

Serves :1

INGREDIENTS:

• 6 oz. can of Tuna, drained

• Mixed spinach and green onion salad

• Italian Dressing

• 1/2 tsp mustard

• Fish sauce (optional)

INSTRUCTIONS:

  1. Prepare the Salad: Wash and dry the spinach and green onions. Chop the green onions into small pieces. In a large bowl, mix the spinach and chopped green onions.
  2. Add Tuna: Open the can of tuna and drain the liquid. Flake the tuna with a fork and add it to the salad bowl with the spinach and green onions.
  3. Prepare the Dressing: In a separate small bowl, prepare the Italian dressing. You can use store-bought dressing or make your own by mixing olive oil, vinegar, Italian herbs, garlic powder, salt, and pepper. Adjust the flavors to your preference.
  4. Add Mustard and Fish Sauce (Optional): Add half a teaspoon of mustard to the dressing and mix well. If you prefer a more umami flavor, you can use fish sauce instead of salt in the dressing.
  5. Toss the Salad: Pour the dressing over the salad and tuna mixture. Toss everything together until the salad is evenly coated with the dressing.
  6. Serve: Serve the tuna salad immediately as a light and refreshing meal option. You can enjoy it as is or pair it with your favorite side dishes or bread.

Note: You can customize this salad by adding other vegetables, such as cherry tomatoes, cucumbers, or bell peppers, according to your taste preferences. Feel free to adjust the dressing’s quantities to suit your desired taste and texture. Enjoy your delicious and healthy tuna salad!

VARIATIONS OF THE TUNA SALAD:

  1. Tuna and Avocado Salad: Add diced ripe avocados to the tuna salad for a creamy and nutritious twist. The avocado complements the tuna and provides healthy fats and extra creaminess to the salad.
  2. Mediterranean Tuna Salad: Mix in Kalamata olives, cherry tomatoes, cucumber, and feta cheese to the tuna salad. Drizzle with lemon juice and olive oil for a refreshing Mediterranean flavor.
  3. Asian Tuna Salad: Combine tuna with shredded carrots, sliced bell peppers, edamame, and scallions. Dress the salad with a sesame soy dressing for an Asian-inspired taste.
  4. Greek Tuna Salad: Mix tuna with chopped red onions, diced tomatoes, cucumbers, and crumbled feta cheese. Toss in some oregano and dress the salad with a lemon-oregano vinaigrette.
  5. Tuna and Bean Salad: Add various beans like chickpeas, kidney beans, or black beans to the tuna salad for extra protein and texture. Mix with diced red onions, bell peppers, and cilantro. Dress with a lime-cilantro dressing.
  6. Tuna Pasta Salad: Incorporate cooked pasta (such as penne or farfalle) to the tuna salad. Add halved cherry tomatoes, diced bell peppers, black olives, and fresh basil. Dress with Italian dressing.
  7. Tuna and Quinoa Salad: Combine cooked quinoa with flaked tuna, diced cucumber, cherry tomatoes, and fresh herbs like parsley and mint. Dress with a lemon-dijon vinaigrette.
  8. Tuna and Apple Salad: Mix tuna with diced apples, celery, and toasted walnuts. Add a touch of honey mustard dressing for a delightful sweet and savory flavor.
  9. Spicy Tuna Salad: Add diced jalapenos or crushed red pepper flakes to the tuna salad for a spicy kick. Mix in diced avocado, black beans, and corn. Dress with a lime-chili dressing.
  10. Tuna and Beet Salad: Incorporate roasted or pickled beets to the tuna salad. Add goat cheese, arugula, and toasted pine nuts. Dress with a balsamic vinaigrette.
