For another hit of apple, garnish with apple chips
SERVES 4
INGREDIENTS
- 2 cups apple cider
- 2 cups plain unsweetened oat milk
- 1/2 teaspoon kosher salt
- 1/2 teaspoon plus 1/8 teaspoon ground cinnamon, divided
- 2 cups rolled oats
- 1 cup shredded peeled apple, such as Fuji (about 2 apples)
- 1/4 cup pure maple syrup
- 1 cup small dice unpeeled apple, such as Fuji
INSTRUCTIONS
- Add the cider, oat milk, salt, and 1/2 teaspoon of the cinnamon to a medium saucepan.
- Stir the ingredients and bring to a boil over medium-high heat.
- Stir in the oats and shredded apple, and cook uncovered over medium heat until thickened, about 2 minutes, stirring frequently.
- Stir in the maple syrup.
- Cover the pan and let sit off of the heat until thickened and the oats and apple are cooked through, about 5 minutes.
- Stir again.
- Ladle the oatmeal into 4 small bowls.
- Sprinkle the diced apple and remaining 1/8 teaspoon cinnamon over the top.
- Serve and enjoy!
