Toscana soup is a hearty and comforting meal that is best served during cooler months or on a chilly day. It’s a perfect dinner option that can be served any day of the week and is sure to warm you up and fill you up. It’s also a great option for entertaining, as it can be made ahead of time and reheated when ready to serve. This soup is best enjoyed hot, so it’s a good idea to prepare it just before serving or to heat it up if made in advance. Serve with crusty bread or a side salad for a complete and satisfying meal.

Preparation time: 15-20 minutes
Cooking time: 30-40 minutes
Serving size: 6-8 bowls (serving size may vary depending on the size of the bowls and desired portion size)

Ingredients:

  • 1 lb Italian sausage
  • 1 large yellow onion, chopped
  • 3 cloves garlic, minced
  • 3 medium carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 4-5 red potatoes, cubed
  • 1 cup kale, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions:

  1. Heat the olive oil in a large soup pot over medium heat.
  2. Add the sausage and cook until browned, breaking it up into small pieces with a spatula as it cooks.
  3. Remove the sausage from the pot with a slotted spoon and set aside.
  4. Add the onion, garlic, carrots, and celery to the pot and cook until soft, about 5-7 minutes.
  5. Stir in the cubed potatoes and cook for another 2-3 minutes.
  6. Pour in the diced tomatoes, chicken or vegetable broth, and browned sausage.
  7. Bring the soup to a boil, then reduce the heat and let it simmer for 10-15 minutes, or until the potatoes are tender.
  8. Stir in the kale and cook for another 2-3 minutes, or until it has wilted.
  9. Stir in the heavy cream and let the soup heat through.
  10. Season with salt and pepper to taste.
  11. Serve hot and enjoy!

Note: You can add additional seasonings or ingredients to the soup as desired, such as red pepper flakes for a little heat, or a splash of balsamic vinegar for a touch of acidity.

Remember to taste and adjust the seasoning as needed, as the sausage and canned tomatoes may already have salt in them. You can also adjust the level of spiciness by using spicy Italian sausage or adding more red pepper flakes to the soup.
