Yield: 4 generous servings, each with 6 grams of carbohydrates and 2 grams of fiber, for a total of 4 grams of usable carbs and 1 gram of protein.
INGREDIENTS
- 4 medium size, ripe tomatoes
- 1/2 cup fresh, coarsely chopped basil
INSTRUCTIONS
- Slice the tomatoes and arrange them on a platter.
- Sprinkle the basil over them.
- Let the salad sit for a half-hour or so before serving.
