The simple addition of a tangy cheese like Gorgonzola gives this sauce an extra flavor dimension. Added at the end of cooking, the cheese melts into the sauce and turns it creamy. Serve over fettuccine.

Tomato-Gorgonzola Sauce is a rich and creamy sauce that combines the tangy flavors of Gorgonzola cheese with the natural sweetness of Italian tomatoes. This sauce offers a unique and indulgent taste that pairs wonderfully with a variety of dishes.

The base of the sauce begins with a savory combination of butter and finely chopped onions, creating a flavorful foundation. The onions are cooked until tender and golden, infusing the sauce with their aromatic essence.

Italian tomatoes, along with their juice, are then added to the saucepan. These tomatoes can be passed through a food mill to remove the seeds or pureed in a food processor or blender, resulting in a smooth and velvety texture. The sauce is simmered until it slightly thickens, allowing the flavors to meld together.

The Tomato-Gorgonzola Sauce is seasoned with salt and freshly ground pepper to balance the flavors and enhance the overall taste. The result is a sauce that boasts a harmonious blend of tangy, savory, and slightly sweet notes, making it a perfect accompaniment to pasta dishes, grilled meats, or even as a flavorful dip.

Makes 2½ cups

 

INGREDIENTS

  • 3 tablespoons unsalted butter
  • 1 small onion, finely chopped
  • 1 (28-ounce) can Italian tomatoes, with their juice
  • 4 ounces Gorgonzola dolce
  • Salt and freshly ground pepper

 

INSTRUCTIONS

  1. Melt the butter in a large saucepan over medium-low heat.
  2. Add the onion and cook until tender and golden, 8 to 10 minutes.
  3. Pass the tomatoes, with their juice, through a food mill to remove the seeds, or squeeze out the seeds and puree in a food processor or blender.
  4. Pour the tomatoes into the saucepan, bring to a simmer, and cook until the sauce is slightly thickened, about 10 minutes.
  5. Cut the Gorgonzola dolce into chunks and scatter them over the sauce.
  6. Let the cheese soften for 1 minute, then stir well.
  7. Season to taste with salt and freshly ground pepper.
  8. Serve and enjoy!
