Tomato Braised Cabbage

Chopped onion and tomatoes sweeten the flavor of the cabbage as they simmer together in the pan. For a spicier dish, add a pinch of crushed red pepper.

Braised Cabbage with Tomatoes is a simple and flavorful side dish that combines the sweetness of cooked onions, the richness of tomatoes, and the tender texture of braised cabbage. It can be enjoyed as a standalone dish or as a complement to various main courses. Whether served hot or at room temperature, this dish offers a satisfying and comforting addition to any meal.

Serves 4 to 6

 

INGREDIENTS

  • 1 medium onion, finely chopped
  • ¼ cup extra-virgin olive oil
  • 1 small head green cabbage, cored and cut into bite-size pieces
  • 1 (14- to 16-ounce) can chopped Italian tomatoes
  • ¼ cup water
  • Salt and freshly ground pepper

 

INSTRUCTIONS

  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the chopped onion to the skillet and cook until tender and golden, about 8 minutes.
  3. Stir in the bite-size pieces of cabbage, chopped tomatoes, water, and season with salt and freshly ground pepper to taste.
  4. Bring the mixture to a simmer, then cover the skillet.
  5. Cook the cabbage mixture for 20 minutes, or until the cabbage is tender.
  6. If there is excess liquid in the skillet, uncover and cook for an additional 5 minutes to reduce the liquid.
  7. Serve the braised cabbage hot or at room temperature.
