The history of dulce de leche dates back to the 19th century, and it has since become a beloved confectionary in many cultures worldwide.

Bananas, on the other hand, have a long history and are widely available and cherished in various cuisines. Combining the richness of dulce de leche with the natural sweetness and flavor of bananas creates a unique and unforgettable cake experience.

INGREDIENTS

Topping (Dulce de Leche):

  • 1 can (14 oz) sweetened condensed milk

 

Layered Banana Cake:

  • 3/4 cup unsalted butter, room temperature
  • 1 1/2 cups Extra Fine Granulated Sugar
  • 3 large eggs, room temperature
  • 3/4 cup plain yogurt
  • 2 large ripe bananas, mashed
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

 

Dulce de Leche Frosting:

  • 16 ounces cream cheese, room temperature
  • 1 can (14 oz) sweetened condensed milk
  • 2 cups Confectioners Powdered Sugar
  • 1/2 teaspoon salt

 

INSTRUCTIONS

  1. Start by making the dulce de leche. Place two 14-ounce cans of sweetened condensed milk (labels removed) on their sides into a large pot of boiling water. Lower the heat and simmer for 2 1/2 hours, ensuring that the water covers the top of the cans at all times. Add more water every 30 minutes as needed. Allow the cans to cool to room temperature before opening. This step is crucial to prevent the hot dulce de leche from gushing out and causing burns.
  2. While the dulce de leche is cooling, prepare the banana layer cake. Preheat the oven to 350°F (175°C) and grease three 8-inch cake pans. Set them aside.
  3. In a large bowl, cream the unsalted butter and granulated sugar on medium speed. Add the eggs, plain yogurt, mashed bananas, and vanilla extract, mixing well to combine.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Slowly fold the dry ingredients into the wet mixture until fully combined.
  5. Scoop the cake batter evenly into the prepared pans and bake for approximately 35 minutes, or until the cakes are golden brown and a knife inserted into the center comes out clean. Allow the cakes to cool for at least 10 minutes before removing them from the pans and letting them cool completely on a wire rack.
  6. While the cakes are cooling, prepare the dulce de leche frosting. Whip the cream cheese, one can of prepared dulce de leche, and powdered sugar until smooth. Frost the top of each cake layer and stack them. Frost the sides and top of the cake completely. Place the cake in the freezer for 5-10 minutes to cool the frosting.
  7. In a small microwave-safe bowl, stir half of the remaining can of dulce de leche with salt, then heat it in the microwave for 25 seconds. Remove the cake from the refrigerator and drizzle the warmed dulce de leche over the top of the cake.
