Tequila, a distilled spirit made from the blue agave plant, is a popular alcoholic beverage commonly associated with Mexico. Its distinct flavor profile, with notes of agave and a hint of citrus, makes it an excellent addition to culinary creations. INGREDIENTS

  • 1/4 cup (60 g) melted unsalted butter
  • 1 1/4 cups (310 g) Graham cracker crumbs
  • 16 oz (480 g) cream cheese at room temperature
  • 1/2 cup (125 g) granulated sugar
  • 2 tablespoons lime zest
  • 4 tablespoons freshly squeezed lime juice
  • 4 tablespoons tequila
  • 2 tablespoons liqueur (any complementary liqueur like orange or Triple Sec can be used)
  • 2 tablespoons heavy cream
  • 2 large eggs at room temperature

 

INSTRUCTIONS

  1. Preheat your oven to 350°F (175°C).
  2. Line a 9×9-inch baking pan with aluminum foil and grease it with cooking oil to prevent sticking.
  3. In a medium mixing bowl, combine the melted butter and Graham cracker crumbs, mixing well. Press the mixture gently onto the bottom of the foil-lined baking pan to create the crust.
  4. In a separate mixing bowl, combine the cream cheese and granulated sugar. Beat the mixture until it becomes smooth and fluffy.
  5. Stir in the lime juice, lime zest, tequila, liqueur, and heavy cream, mixing until well combined.
  6. Beat in the eggs, one at a time, until fully incorporated into the cream cheese mixture.
  7. Pour the cream cheese mixture over the prepared Graham cracker crust, spreading it evenly into the corners.
  8. Bake the cheesecake in the preheated oven for 20-25 minutes until the edges are set and the center is slightly jiggly.
  9. Remove the cheesecake from the oven and set it aside to cool completely. Once cooled, refrigerate it for at least 3 hours to allow it to chill and set.
  10. After refrigeration, the Tequila Cheesecake is ready to be served. You can garnish it with lime slices or a drizzle of tequila or liqueur, adding extra flair and flavor.
