INGREDIENTS

FOR THE SWEET POTATO PANCAKES:

  • 1 cup cooked and mashed sweet potatoes
  • 1 1/2 cups all-purpose flour
  • 2 tablespoons brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 1/4 cups buttermilk
  • 2 large eggs
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract

 

FOR THE CARAMEL SAUCE:

  • 1 cup granulated sugar
  • 1/4 cup water
  • 1/2 cup heavy cream
  • 2 tablespoons unsalted butter
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

 

INSTRUCTIONS

PREPARING THE SWEET POTATO PANCAKES:

  1. In a large mixing bowl, whisk together the flour, brown sugar, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg.
  2. In a separate bowl, whisk together the mashed sweet potatoes, buttermilk, eggs, melted butter, and vanilla extract until well combined.
  3. Gradually add the wet ingredients to the dry ingredients, stirring just until the batter is combined. Be careful not to overmix, as this can result in dense pancakes.
  4. Preheat a griddle or large skillet over medium heat and lightly grease with cooking spray or butter.
  5. Pour approximately 1/4 cup of batter onto the preheated griddle for each pancake. Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
  6. Continue cooking the remaining batter in batches, adjusting the heat if necessary to prevent burning.

 

PREPARING THE CARAMEL SAUCE:

  1. In a medium saucepan, combine the granulated sugar and water over medium-high heat. Stir until the sugar has dissolved.
  2. Allow the mixture to come to a boil, then reduce the heat to low and simmer without stirring for about 8-10 minutes, or until the mixture turns a deep amber color.
  3. Remove the saucepan from the heat and carefully add the heavy cream, butter, vanilla extract, and salt. Be cautious as the mixture will bubble vigorously.
  4. Stir the caramel sauce until smooth and all the ingredients are well incorporated.
  5. Return the saucepan to low heat and simmer for an additional 1-2 minutes, stirring constantly, to ensure the sauce is thickened.

 

SERVING THE SWEET POTATO PANCAKES WITH CARAMEL SAUCE:

  1. Stack the cooked Sweet Potato Pancakes on a serving plate.
  2. Drizzle the warm caramel sauce generously over the pancakes.
  3. Optionally, garnish with additional toppings such as whipped cream, chopped nuts, or a sprinkle of ground cinnamon.

 

NOTES:
