Sweet peas have such a brief season that I rely on frozen most of the year. This recipe makes the most of them by adding sautéed onion and tomato. If you have some fresh basil, sprinkle it in at the end of the cooking.

INGREDIENTS

  • 1 small onion, finely chopped
  • 2 tablespoons extra-virgin olive oil
  • ½ cup chopped fresh or canned Italian tomatoes
  • Salt and freshly ground pepper
  • 1 (10-ounce) package frozen peas
  • ¼ cup water

 

INSTRUCTIONS

  • In a medium skillet, cook the onion in the oil over medium heat until tender and golden, about 10 minutes.
  • Add the tomato and salt and pepper to taste.
  • Cook for 5 minutes, or until the tomato is softened.
  • Add the peas and water.
  • Cover, reduce the heat to low, and cook for 5 minutes, or until the peas are tender.
  • Serve.

 

VARIATION:

  • To turn the peas into a speedy one-dish meal, crack some eggs and place them on top of the cooked peas.
  • Sprinkle some grated cheese over the peas.
  • Clamp a lid on the pan.
  • Cook until the eggs are done to taste.
